Gluten-free Cauliflower Pizza Crust

Ingredients: 
(All ingredients organic)
1- 16 ounce bag frozen cauliflower florets
1 egg
1 cup malon cheese, shredded
½ cup Now Foodsegg white protein powder
1 tsp basil
1 tsp oregano
2 tsp parsley
Muir Glen pizza or marinara sauce or oil base
toppings: pre-roasted veggies: eggplant,baby bella mushrooms, zucchini, spinach leaves, chopped scallions,organic grass fed beef (make sure meats are pre-cooked), shredded hard cheese.
Instructions:
First you “rice” the cauliflower…
I use a 2-qt covered dish and microwave the cauliflower (Don’t add water) until it is cooked, 8 minutes. Using mitts, carefully pour water from the cauliflower. Allow to cool with lid removed.
Cauliflower can be riced in several ways.1. Food processor
2. Nice sharp knife
3. Using a cheese grater
4. Using a ricer

Preheat oven to 450 degrees farenheit.

Prepare an oiled cookie sheet or pizza pie pan or stone (I use organic coconut oil)…

Into the riced cauliflower mix in malon cheese, egg, egg white protein powder, and herbs – mix well and press evenly on the pan a little less than an inch thick.

Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).

Remove the pan from the oven. To the crust, spread an even layer of pizza sauce, then top with meat and veggies and cheese in a beautiful layout. I did half meat and half veggie for my husband who eats meat and veggies for me, a vegetarian. I pre-roasted the eggplant, zucchini, and mushrooms with olive oil in the oven. Then I added them to pizza, along with spinach leaves, chopped scallions and my husband’s meat and of course the cheese…

Then place under a broiler at high heat just until cheese is melted! You won’t believe this crust is cauliflower!

Additional Info:
You can use a head of organic raw cauliflower to make your riced cauliflower. Simply process/rice the head prior to cooking in the microwave. Picky eaters-unite! No trace of cauliflower taste. My husband hates cauliflower and yet loves this pizza! You can make it vegetarian only with just veggies, or vegan by using cashew cheese. Gluten-free, high in protein and high in flavor!
